Ingredients
For the seafood sauce:
- 1/2 stick Butter salted and cubed
- 3 tbsp garlic minced
- 3 tbsp Lemongrass bulb sliced thin
- 3/4 tbsp Chili minced
- 6 tbsp calamansi juice
- 200 g medium-sized shrimp
- 150 g mussels cleaned
- 150 g clams cleaned
For the rice:
- 3 cups white rice grain
- 3 3/4 cups Water
For the vegetables:
- 200 g baby okra
- 1 cob corn slices into ½ inch size
- 250 g kangkong cut into 4 inch length

Instructions
- Put all ingredients for the seafood except calamansi juice in the Instant Pot inner pot. Arrange seafood into an even layer.
- Place rice ingredients in a stainless steel container or pressure cooker safe bowl. Place on top of the seafood in the inner pot.
- For the vegetables, wrap okra, corn, and kangkong separately in an aluminum foil.
- Close the lid and turn the pressure valve into SEALING. Press the [PRESSURE COOK] function and set pressure level to [HIGH]. Adjust time to 4 mins.
- Once done, serve rice on a banana leaf and serve with fresh tomatoes, red onions, and salted eggs.
