  • 2 cups Glutinous Rice
  • 1 can coconut milk
  • 1 1/2 cup Water
  • 3/4 cup Brown Sugar
  • 4 tbsp Butter
  • 1/2 cup tablea chopped
For the Salted Dulce De Leche
  • 1 can Sweetened condensed milk
  • 1/4 cup coconut milk
  • 1/2 tsp Salt

For the Salted Dulce De Leche
  • 1 can Sweetened condensed milk
  • 1/4 cup coconut milk
  • 1/2 tsp Salt
Instructions
  1. Press Saute on the Instant Pot. Melt butter when hot. Stir in the rice. Mix the rest of ingredients except for tablea.
  2. Close the lid and select Pressure Cook on High for 12 minutes. Natural Release Pressure for at least 10 minutes when done.
  3. Open the lid and mix in the tablea to melt.
  4. Transfer into a pan and smoothen into an even layer.
  5. Let the biko cool a little before pouring over the salted dulce de leche.
  6. Optional: Preheat Vortex Air Fryer to 190C, Bake function. Add the biko and let it bake for 15 minutes.
  7. To make the salted dulce de leche: Make the Dulce de leche by removing the label and lid of the condensed milk can. Secure tightly with foil. Lower down into the inner pot and fill with halfway up the can. Pressure cook on High fo 40 minutes. Natural release pressure. Empty the inner pot and return. Press Saute. Mix in dulce de leche, coconut milk, and salt to combine.
