Sous Vide Flank Steak with Mango Salsa

  • 500-1000 grams flank steak
  • 1 tsp Dried Thyme
  • 1 tsp Cumin
  • Salt to taste
  • Pepper to taste
For the Salsa
  • 1 cup Tomatoes diced
  • 1 cup mango diced
  • 1/2 cup basil chopped
  • 1 pc Red Onion diced
  • 1 tbsp calamansi juice
  • 1 tbsp coconut oil
  • 1 tsp chili flakes
  • 2 tbsp coconut sugar
  • 1 tsp Fish Sauce
  • Salt to taste
  • Pepper to taste
For serving
  • 4-6 pcs flatbreads optional

Instructions
  1. Fill the Instant Pot inner pot halfway with water. Close the lid and put the steam release valve to Venting. Press the Sous Vide function. Press + or - buttons to adjust the temperature to 135F/55C. Press the Sous Vide button again. Press + or - Time buttons for 4-8 hours (depending weight of steaks).
  2. Salt and pepper the steak then add to the sous vide pouches. Add the cumin and dried thyme and then seal and place in the water bath. Cook the steak for 4 to 8 hours.
  3. Take the steaks out of the pouches and pat dry. Sear them on a very hot grill or in a hot pan, about 1 to 2 minutes per side. Cut the steak into ¼” to ½” strips and place on a plate. Top with a spoonful or two of the salsa.
  4. To make the salsa: mix all of the salsa ingredients in a bowl. It’s best to make the salsa right before you take the steaks out of the water bath.
