Pour the water in Instant Pot and add the purple yams. Pressure cook for 30 minutes for medium sized yams and 60 minutes for large yams. (you may opt to slice the yams for shorter cooking time). Quick release pressure when done.
Remove the yams from the pot and let slightly cool until easy to touch for peeling.
Peel off the skin and mash the yams well. Add the condensed milk and ube flavor. Mix well.
Prepare the wrappers and spread the yam mixture on each. Adding the cheese slices in the middle and rolling wrappers as you will with lumpia.
Brush the raw turon with oil.
Using the Instant Vortex, Air fry at 200C for 4 minutes. Shake the basket when “turn food” alerts.
