For the seafood sauce:
  • 1/2stick Buttersalted and cubed
  • 3tbsp garlicminced
  • 3tbsp Lemongrassbulb sliced thin
  • 3/4tbsp Chiliminced
  • 6tbsp calamansi juice
  • 200g medium-sized shrimp
  • 150g musselscleaned
  • 150g clamscleaned
For the rice:
  • 3cups white rice grain
  • 3 3/4cups Water
For the vegetables:
  • 200g baby okra
  • 1cob cornslices into ½ inch size
  • 250g kangkong cut into 4 inch length
  1. Put all ingredients for the seafood except calamansi juice in the Instant Pot inner pot. Arrange seafood into an even layer.
  2. Place rice ingredients in a stainless steel container or pressure cooker safe bowl. Place on top of the seafood in the inner pot.
  3. For the vegetables, wrap okra, corn, and kangkong separately in an aluminum foil.
  4. Close the lid and turn the pressure valve into SEALING. Press the [PRESSURE COOK] function and set pressure level to [HIGH]. Adjust time to 4 mins.
  5. Once done, serve rice on a banana leaf and serve with fresh tomatoes, red onions, and salted eggs.
